Tropical Fish Kebabs

Our family loves seafood, and we're always experimenting with different ways to prepare it. Through a few iterations we came up with these fish kebabs that are a fusion of Asian and Island flavors. They're a bit of work to make, but believe me they're worth it.
Ingredients:
1 lb of Mahi Mahi cut into 2 inch cubes
1 green pepper cut into 2 inch pieces
1 doz cherry tomatoes
1 cup of pineapple cut int 2 inc cubes
1 onion cut into 2 inch pieces
1 papaya cut into 2 inch cubes
3/4 cup water
2 tbl corn starch mixed completely with 2 tbl water
1/2 cup puree mango
1 tbl soy sauce
1 tbl sherry
1/2 tsp chili paste
2 tbl sugar
2 crushed garlic cloves
3 tsp grated ginger root
2 tbs peanut oil
3 tbl white vinegar
3 green onions shredded lengthwise
olive oil
kosher salt
fresh ground pepper
Combine water, mango puree, soy sauce, vinegar and sugar in a large mixing bowl. Heat the peanut oil in a large skillet and add the garlic and ginger. Cook for a few minutes and stir in the sauce mixture. Simmer this down for about 10 minutes and stir in the corn starch mixture. Simmer some more, constantly stirring, until nice and thick. Add the chili paste and green onion and reduce heat to warm.
Take some kebob skewers and and arrange the fish, green pepper, onion, tomatoes, pineapple and papaya in a colorful pattern. Note: if you are using wooden skewers, make sure you soak them in water for several hours first so the won't burn. Brush the skewered ingredients with olive oil and season with salt and pepper. Cook them over a low burning flame, turning from time to time until the fish is cooked--about ten minutes. Serve them with rice and cover them with the sauce. A little shredded coconut makes an awesome garnish.

Crammed Tilapia Fish in Stew

Ingredients:
2 medium sized Eggs
2 small size onions
Groundnut oil
1 Large fresh Tilapia fish
Toothpicks
½ a cup of Green peas
2 medium sized carrots
Fresh peppers and tomatoes
4 slices of sliced bread
2 Knorr chicken cubes
Salt to taste
Curry
Thyme
White pepper
Method:
Clean the fish, cut it and season with a cube of knorr chicken, salt, thyme, white pepper and curry. Allow the fish to pickle. Break the eggs and pour the content into a small bowl, add some salt and a quarter of knorr chicken cube and whisk it. Wash the green peas and set aside, wash the carrots, dice it and set aside as well. Pour some groundnut oil into a clean frying pan, when the oil becomes hot, pour the bread into it and fry the bread until it becomes golden brown, then pour in the whisked egg, green peas and the diced carrots and continue to fry until it becomes cooked.
Chop the onion and spread the egg mixture on the clean fish and then spread some of the chopped onion over it. Roll each over and try to secure it with a toothpick. Blend the fresh peppers, tomatoes and onions and set it aside. Heat some groundnut oil for a while and when it becomes hot, add the ground tomatoes, onions and peppers and continue to fry for about 15minutes and add some salt, curry, thyme and white pepper to taste. Remove from heat and serve with a plate of boiled white rice, beans or boiled yam or as you wish.

Fish and Banana - Together?

Have you tried eating fish with banana? Now, it's time to explore and have a taste of combination of the things that you have never tried before.
Fish is considered to be one of the most nutritious foods and if you would make a tandem with banana then you would surely have a very healthy meal. Are you excited to have the recipe?
From a lot of fish recipes, I chose the one with the combination of fish and banana because it is very unique and not everyone has tried eating this kind of food. Here are the things that you need which will just yield up to 4 servings:
Ingredients:
1/4 cup flour
2 teaspoons curry powder
1/4 teaspoon soy sauce
4 bananas, peeled and halved lengthwise
1 pound fish fillets
1 tablespoon oil
3 stalks celery, sliced
4 tablespoons butter
2 tablespoons lemon juice
When everything on the list is prepared then it is time to follow the directions in cooking the Fish with Banana Recipe.
Directions:
1. Mix together flour, curry powder, and soy sauce; coat bananas and fish with this mixture; set aside.
2. Heat oil in skillet. Stir-fry celery until crisp; set aside.
3. Add butter to oil; saute bananas until golden, about 1 minute on each side. Sprinkle bananas with half of lemon juice and remove to serving dish.
4. Saute fish in oil/butter mix until fish comes easily away on a fork, about 3 minutes on each side. Sprinkle with remaining lemon juice. Place on serving dish with bananas. Spoon celery over fish.

Sweet and Sour Fish Recipe

The Chinese are the alchemists who discovered that ginger will deodorize garlic when cooked in the same pot, making the pungent little bulb less antisocial but still full of flavor. They also set great store by it for
de-fishing fish and duck (which sometimes tastes fishier than fish).
The following recipe shows the job a slice of ginger, no bigger than a dime, can do to make a whole fish delectable.
SWEET AND SOUR FISH
2 teaspoons soy sauce (thick type)
2 tablespoons cornstarch (or flour)
1/4 cup vinegar
5 tablespoons brown sugar
1 slice ginger, crushed and minced
2 tablespoons peanut oil
1 clove garlic, crushed
1 whole fresh sea bass or porgy, about 2 pounds, cleaned (or any frozen fish, thawed and drained)
2 tablespoons soy sauce (thick type)
2 cups canned condensed chicken broth
Blend the 2 teaspoons soy sauce, cornstarch, vinegar, sugar, and minced ginger, and cook in saucepan until mixture thickens slightly. Set aside.
In a big skillet, heat peanut oil over high flame, toss in crushed garlic clove, sizzle until it has nothing left to give, and discard. Score raw fish with 2-inch gashes about 2 inches apart. Pour 2 tablespoons soy sauce over the raw fish; then fry it in the garlic-flavored skillet until it looks golden. Add chicken broth, cover and cook until tender. Before serving, stir in sauce and heat. Smaller pieces of fish can also be treated in this way. The proportions of vinegar and sugar may be adjusted to taste. Serves 4.

Healthy Diabetics Catfish Recipe and Baked Fish Recipe

Fish provides us with good protein source. It is always good to eat more fish than meat. Below are a few simple and healthy catfish recipes and baked fish recipe.
Pan-Seared Catfish with Light Cream Sauce
Serves 4

Ingredients:
4 catfish fillets (6 oz each)
Pinch salt
Pinch black pepper
2 Tbsp flour, sifted
2 tsp olive oil
Sauce:
1 tbsp minced shallots
1/2 cup dry white wine
1 cup fish stock
1/2 cup fat-free half & half
2 tsp minced thyme
1 Tbsp chopped scallions
Methods:
Place the catfish on a flat surface. Season with salt and pepper and then dredge in sifted flour.
Preheat a saute pan over medium-high heat, add olive oil. Place fillets carefully in pan and cook until golden brown. Turn over and repeat until fish is cooked. Remove fish from pan.
Add shallots to pan and sweat them. Add white wine to de-glaze, reduce until almost dry. Add fish stock and half & half, bring to a simmer.
Add a small amount of water to the cornstarch to make slurry and whisk into sauce to thicken.
Add thyme and finish with scallions.
Pour sauce over fish and serve.
Baked Salmon with Mango Vinaigrette
Serves 4

Ingredients:
4 salmon steaks/fillets (6 oz each)
2 tsp extra-virgin olive oil
Pinch salt
Green peppercorns, to taste
8 sprigs fresh thyme
4 tbsp mango vinaigrette
Method:
Place salmon in a baking dish. Using a pastry brush, lightly coat salmon with extra-virgin oil. Season with salt and green peppercorns. Place a few sprigs of thyme on top of the salmon. Bake for 15 to 20 minutes at 375 Fahrenheit until salmon is fully cooked.
Drizzle 1 tbsp of mango vinaigrette over the salmon and serve immediately.

Free Fish Recipes

Almond Baked Fish
1 1/2 teaspoons lemon juice
1 1/2 teaspoons butter or margarine, melted
1/4 teaspoon salt
4 flounder fillets or other fish fillets (about 1 pound)
1/3 cup mayonnaise
1/2 cup saltine cracker crumbs
3 tablespoons butter or margarine, melted
2 tablespoons slivered almonds
Combine first 3 ingredients in a 12x8x2 inch baking dish. Arrange fish in dish; spread mayonnaise over fish.
Combine cracker crumbs, 3 tablespoons melted butter and almonds; sprinkle over fish. Bake at 400 degrees for 10 to 15 minutes or until fish flakes easily when tested with a fork. Yield: 3 to 4 servings.
>>Lemon Barbecued Catfish
1/4 cup commercial barbecue sauce
1/2 teaspoon grated lemon rind
1 1/2 tablespoons lemon juice
1 1/2 pounds catfish fillets
Combine first 4 ingredients; stir well. Brush each side of fillets with sauce and place in a lightly greased 12x8x2 inch baking dish. Brush on remaining sauce. Bake at 350 degrees for 25 minutes or until fish flakes easily when tested with a fork. To serve, place fillets on a serving platter. Yield: 6 servings.
>>Italian Fish
1 1/2 pounds flounder fillets or other fish fillets
1/4 teaspoon dried whole oregano
1/8 teaspoon pepper
1 (15 1/4 oz.) jar spaghetti sauce
2 tablespoons minced fresh parsley
1 cup (4 oz.) shredded mozzarella cheese
Arrange flounder fillets in a lightly greased 13x9x2 inch baking dish; sprinkle with oregano and pepper. Pour spaghetti sauce over fillets; sprinkle with parsley. Bake, uncovered at 350 degrees for 20 minutes or until fish flakes easily when tested with a fork. Top with cheese; bake an additional 5 minutes. Yield: 6 servings.
